I created this based on one served at my daughter’s baby shower. Cut the fat and sugar to make it healthier.
A meal in itself! I serve this on greens, but you can also serve this depending on the season on top of a colorful maple leaf, or in hollowed out apples or mini-pumpkins, use your imagination.
Healthy and very colorful
This is a good summer salad and the longer it marinades the better it is
Great for energy especially if you are a runner, (marathons, etc.)
A creamy raspberry pie with a crumb topping
Great to have as a quick dinner, accompanied by a crisp salad, and even better refrigerated and cold for breakfast the next morning!
A creamy tomato soup with cheesy tortellini and chicken with a pop of color from the bright green spinach.
A classic fish stew that is easy yet fancy enough to be an elegant meal! It is brimming with shrimp, fish, crab and clams – so healthy and low calorie too!
