Southwest chicken salad

Ingredients

  • 4 cups shredded or cubed cooked chicken
  • 2 cups canned or thawed frozen corn
  • 1 cup chopped sweet peppers
  • 1 cup black beans (opt.)
  • 1 cup chopped onion
  • 1 cup minced fresh cilantro

Dressing:

  • 3 tablespoons lime juice
  • 5 tablespoons olive oil
  • 4 teaspoons honey
  • 2 teaspoons cumin
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon black pepper

Directions

    1. In large bowl, combine chicken, corn, peppers, beans (if using), onion, & cilantro.
    2. In small bowl, whisk all dressing ingredients.
    3. Pour dressing over chicken mixture & toss to coat.
    4. Serve over salad greens.
