Aunt Lydia’s Famous Carrot Cake & Cream Cheese Frosting

Prep: 30 minutes | Cook: 300 degrees for 40 minutes | Servings: 10-12

Ingredients

  • 2 cups sugar
  • 1 1/2 cups vegetable or coconut oil
  • 4 eggs
  • 2 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 3 cups grated carrots
  • 3/4 cup chopped walnuts
  • 3/4 cup raisins (optional)
  • 3/4 cup coconut (optional)

Aunt Lydia’s Famous Cream Cheese Frosting

  • 8 oz. package cream cheese
  • 1 stick butter
  • 1 lb. confectioner’s sugar
  • 1 t vanilla

Directions

  1. Combine ingredients in the order given.
  2. Bake in 3 greased and floured 8 inch layer pans.
  3. While baking prepare the frosting in mixer.
  4. Bake at 300 degrees for 40 minutes. Cool before frosting
