Cauliflower Salad

Ingredients:

  • 4 cups thinly sliced raw cauliflower
  • 1 cup coarsely chopped olives
  • 2/3 cup chopped green bell pepper
  • 1/2 cup chopped pimiento
  • 1/2 cup chopped onion

Dressing:

  • 1/2 cup salad oil (vegetable, canola, etc.)
  • 3 tablespoons lemon juice
  • 3 tablespoons white or wine vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/4 teaspoon black pepper

Combine the cauliflower, olives, green peppers, pimentos, and onion. To prepare the dressing, beat dressing ingredients with a rotary mixer or blender. Pour the dressing over the veggies; mix and stir until well blended. Refrigerate covered for 4 hours or overnight.
