Chicken Cordon Bleu

Ingredients

  • 4 boneless skinless chicken breast halves
  • 2 tablespoons butter or oleo
  • 1 teaspoon thyme
  • 4 thin slices of fully cooked ham
  • 2 thin slices of Swiss cheese
  • 2 eggs
  • 1/2 cup milk
  • 1/2 cup flour
  • 3/4 cup bread crumbs
  • 1/2 teaspoon garlic powder
  • 1 teaspoon oregano
  • 1/4 cup shredded Parmesan cheese

Directions

  1. Pound chicken to flatten, spread with butter and sprinkle with thyme
  2. Top with a slice of ham and cheese
  3. Roll up tightly and secure with toothpicks
  4. Beat eggs and milk together and dip chicken into mixture
  5. Dip chicken into flour and then back into the egg mixture
  6. Combine bread crumbs, garlic powder, oregano and Parmesan and coat chicken with the mixture
  7. Place chicken on a greased sheet and bake at 350 for 40-45 minutes
