Chicken Salad

Ingredient

  • 1 cup cooked rice
  • 1 tablespoon minced onion
  • 1/2 teaspoon vinegar
  • 1 tablespoon olive oil
  • 2 cups cooked cubed chicken
  • 1/2 cup celery diced
  • 1/2 cup green grapes, halved or quartered
  • 1 can mandarin oranges, drained
  • 1/2 cup chopped walnuts
  • 2/3 cup low-fat mayonnaise
  • 1 tablespoon French dressing
  • salt & pepper to taste

Directions

  1. Combine rice, onion, vinegar, and olive oil; chill. Add chicken, salt, pepper, celery, walnuts, mayo and French dressing; mix all together. Add mandarin oranges and grapes. Mix lightly and oranges will fall apart if mixed

  4. Chill and serve.

Serve on crackers, bread, or eat with fork.
