- 2 cans of corn, drained
- 2 cans of black beans, drain & rinse
- 1/4 cup apple cider vinegar
- 1/4 cup light olive or canola oil
- 1/4 cup white sugar
- Add vinegar, oil, and sugar to bowl and mix. Let sit 10 minutes.
- Put corn and beans in seal-able container. Add oil mix to corn mix and stir.
- Put in fridge overnight, stirring occasionally. Let come to room temp before serving. The best pairing is scoop type tortilla chips!
