Cream Cheese Cranberry Bread

Ingredients

  • 8 ounces softened cream cheese
  • 2 sticks softened unsalted butter
  • 1 ½ cups sugar
  •  1 ½ teaspoons vanilla
  • 4 eggs
  • 2 cups all purpose flour
  • ½ teaspoon salt
  • 1 ½ teaspoon baking soda
  • 2 cups fresh cranberries

 Directions

  1. Cream together 8oz. softened cream cheese & 2 sticks softened unsalted butter,
  2. add 1 ½ c sugar mix well,
  3. add 1 ½ t vanilla & 4 eggs.
  4. Mix together 2C AP flour, ½ t salt & 1 ½ t baking soda, add to batter,
  5. fold in 2 C fresh cranberries.
  6.  Fill loaf pans ¾ full bake @350 small loaves 30-35 minutes.  Makes 10 small loaves
