Crunchy Crunch Drops

Ingredients

  • 2 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup soft butter
  • 1 cup light-brown sugar, firmly packed
  • 1 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups raw quick-cooking oats
  • 3 1/2 ounces flaked coconut

Directions

  1. Preheat oven to 375 degrees.
  2. Lightly grease cookie sheets.
  3. Sift flour with baking soda and salt; set aside.
  4. Beat together butter, sugars, eggs and vanilla until light and fluffy.
  5. Add flour mixture until well combined.
  6. Stir in oats and coconut until well blended to make a stiff dough.
  7. Drop by slightly rounded teaspoonfuls, 2 inches apart, onto prepared cookie sheets.
  8. Bake 12-15 minutes.
  9. Cool on wire rack.
