Fresh Corn Salsa

Ingredients

  • 2 cups corn kernels, fresh or frozen
  • ½ cup purple onion, diced
  • ½ cup red pepper, diced
  • 1-2 jalapeños, seeded and minced
  • ½ cup cilantro, chopped
  • 4 teaspoons lime juice
  • 1 teaspoon kosher salt

Directions

  1. Saute corn over medium-high heat until kernels begin to char.
  2. Set aside to cool.
  3. In a medium bowl, combine onion, red pepper, jalapeno, cilantro, lime juice, and salt.
  4. Add sauteed corn and stir to combine.
  5. Enjoy with fresh chips!
