- 3/4 cup mashed potatoes, real or instant, plain
- 4 cups or 1 pound flaked coconut
- 1 teaspoon almond extract
- 1 pound Powdered sugar
- chocolate coating of your choice (I use dark chocolate)
- Mix the first 4 ingredients. Mixture will be sticky. Roll into small balls, transfer to cookie sheets on wax paper; put in freezer until firm.
- Dip in chocolate coating and place on wax paper, once set put in an airtight container.
