Pear Bread

Ingredients

  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoon cinnamon
  • 3 eggs
  • 3/4 cup vegetable oil
  • 2 cups sugar
  • 2 cups pears, peeled & chopped
  • 2 teaspoon vanilla
  • 1 cup pecans or walnuts, chopped, if desired

Directions

Preheat oven to 325 F. Grease and flour two loaf pans or paper 24 muffins cups. Combine flour, baking soda, baking powder, salt and cinnamon in a medium bowl. Mix eggs, oil, sugar, pears, and vanilla in a small bowl; add to flour mixture, stirring just until moistened. Stir in nuts. Spoon into pans. Top with streusel. Bake for 45 min. to 1 hour for a loaves, and about 20 min for muffins, or until toothpick inserted in center comes out clean. Cool 10 min. before removing from pan to cooling rack.

Streusel: 1/2 pound butter, 5 ounces sugar, 4 ounces brown sugar, 1/2 teaspoon salt, 3/4 teaspoon cinnamon, 1/4 teaspoon mace, 1 pound cake flour, and if desired, 4 ounces chopped nuts.  Using a pastry blend, cut ingredients together until crumbly.
