- 3 large red tomatoes, seeded and diced
- 1 large white onion, diced
- 1/2 cup fresh cilantro, chopped
- fresh juice from 1 lime
- 6 jalapeños, diced with seeds intact
- generous pinch of salt, to taste
- Combine all ingredients in a large bowl. Serve immediately or cover and chill until ready to use. For a sweet twist: Add diced mangos and use red, yellow and orange sweet peppers.
