Tomato Bisque

Ingredients

  • 2 tablespoons butter
  • 1 small onion , chopped
  • 2 tablespoons flour
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup milk
  • 1 pint tomatoes, slightly mashed

Directions

  1. Serve immediately.
  2. Sautë onion in butter until golden. Remove from heat and add flour, sugar, salt, pepper and milk.  Cook, stirring constantly, until sauce thickens and boils.
  3. Boil sauce one minute. Stir in tomatoes and heat through.
  4. Serve immediately.
