Apple Cheesecake

Ingredients

  • Crust: 1 cup butter, 2/3 cup sugar, ½ teaspoon vanilla, 2 cups flour
  • Filling:  8-ounce pkg. cream cheese, ¼ cup sugar, 1 teaspoon vanilla, 1 egg
  • Topping: 6-8 McIntosh apples peeled and thinly slices (lemon over), 1/3 cup sugar, 2 teaspoons cinnamon
  • Sprinkle  1/4 cup almond slices over the top

Directions

  1. Crust: Blend and press into 8-inch spring form pan- ¾ of the way up the pan1 c butter, 2/3 c sugar, ½ tsp vanilla, 2 c flour
  2. Filling:  Blend and pour into crust- 8-ounce pkg. cream cheese, ¼ cup sugar, 1 teaspoon vanilla, 1 egg
  3. Topping: 6-8 McIntosh apples (Granny Smith will work too- I also use apples from the ancient trees in my yard)  peeled and thinly slices (lemon over), 1/3 cup sugar, 2 teaspoons cinnamon. Mix together and press crust down to meet apples.
  4. Sprinkle almond slices over the top
  5. Bake at 450 º for 10 minutes then 400º for 25 minutes.
