- 2 – 3 tablespoons butter
- 4 large eggs
- 1/3 cup grated sharp cheddar cheese
- 1/3 cup seeded and chopped tomatoes
- 1-2 teaspoons prepared horseradish (not cream style)
- Tabasco to taste
- salt and pepper
- Melt butter in skillet over medium heat
- Whisk eggs until almost totally homogenized.
- Add eggs to skillet and stir gently. After they have begun to thicken add rest of ingredients.
- Stir until cheese melts and is incorporated.
- Serve immediately.
